Hi Everyone! I am going to walk you through nutrition course. My name is Kim Schenck and I have a masters degree in nutrition and I have been a registered dietitian for over 23 years.  I have worked in bariatric practice and long-term care consulting, and more recently in higher education.

In addition to being a proud mom to two sons, both college students, that might not be as enthusiastic about me posting their picture, I am also mom to who I think is the cutest dog in the world.  My cock-a-poo Maggie has been my loyal companion for almost 13 years. The nice thing about dogs is they don’t have a say i what picture of them is posted.

I am passionate about nutrition, and I love sharing and empowering students with knowledge not only for their own health but also as practitioners to share with their patients.

Because of the extraordinary care that I, my family members, and friends have received from nurses over the years, the profession has a permanent soft spot in her heart.  Nurses rock!

This course is going to cover a lot of great topics including The science of nutrition, macro and micronutrients, digestion and absorption nutrition requirements for healthy individuals, key nutrients in the prevention of chronic disease, nutrition related diseases, and energy balance and weight control.
